Menu Plan Monday ~ 16 Apr 07

Monday
Chicken Squares(Yes, these were last week's Monday meal too... but I have been wanting them again all week!)
I mentioned in my weekend reflection how I modified the recipe...


Tuesday
Fajitas in crockpot
(I plan to make these with coke instead of beer because I don't have beer on hand... ever...)
guacamole:
3-4 advocados
1 clove garlic pressed
2 T. salsa
1 T sour cream
1/2 limed squeezed
pinch kosher salt



Wednesday
meatloafmashed potatoes
broccoli
rolls



Thursday
Italian Wedding Soup
(from Mrs. T... didn't get to this last week)



Friday
Penne pasta...
Saute 2-3 cloves garlic in olive oil, chicken, add artichoke hearts, sun dried tomatoes, and calamata olives... stir in italian seasonings, and pinch of kosher salt... toss with penne pasta and serve with freshly grated parmesan cheese!
Garlic bread...
Slice loaf of baguette bread
melt 1 stick butter with 1 pressed clove garlic, stir in red pepper flakes and oregano & basil... and parmesan cheese, pour down each slice and put the leftovers on top. Wrap in foil and bake at 300 for about 30 minutes.

Well, glad to see you are home and back to the blog. I am having a hard time getting back into the swing! Your menu looks great--the chicken squares do sound wonderful, but I just don't make anything with cream cheese--due to my lactose intolerance! I'd love to stop by for the fajita's if I could!

Gosh, that all sounds so good! I love those chicken squares, and we love fajitas and quesadillas. You know, I need to try Italian wedding soup sometime. I've had it in a restaurant and really liked it, but never made it.

Looks so YUMMY! That Italian Wedding Soup was FANTABULOUS. For our fajitas I do a marinade of equal parts olive oil and lime juice with some southwestern seasonings.
