This is what's in my crock pot today...
frozen boneless skinless chicken breasts (3 or so)
1 can rotel
1 can stewed tomatoes
2 cans black beans
2 cans hominy
1 can chicken broth
1 package taco seasoning
1 package dry ranch dressing mix
Cook on low all day and serve with cornbread! YUM!

Your recipe sounds wonderful! I'm going to have to make that this weekend... I have a busy weekend, and that sounds perfect!....hopefully I can find hominy (last time I looked for it the store I was at didn't have any), if not, I'll use corn (I know, it's not the same, but it will work)
